Abstract
One
of the problems in the cafeteria of the Catholic Bolivian University “San
Pablo” (UCBSP) has been for a long time the lack of food sanitation. This has been
confirmed by many of the students of said establishment. The objective of this
research paper was to evaluate the fulfillment of the biosecurity norms
according to the rule of sanitary vigilance applied in the cafeteria of UCBSP
in the academic unit of Santa Cruz de la Sierra in September 2011. Three food
businesses were evaluated separately through a checklist based on the National
Health Code and the information obtained in SEDES (Departmental Health
Service). The infrastructure, equipment, manipulation and updated documentation
were assessed and to corroborate the results surveys were made to 300 customers
about their satisfaction with the food sanity of the cafeteria. It was
concluded that the three businesses in general met 21% of the biosecurity norms
required and that the respondents in their big majority were not satisfied.
Through these results it was possible to determine that the norms were not met
in none of the areas that were evaluated and it was confirmed what was
suspected about the negative opinion of the consumers of the cafeteria.
